Its working time again after the memorable, relaxing and reflective holy week. I just stayed at home during the entire four days. I am in the laid back side for the past days so waking up early this morning was still heavy. Any way I arrived early at the office, fixing things and reports that needs to be finished at the early days of the week. It seems that the office personnel are very cool and light headed. I received lots of smiles, hellos and many happy faces. The week end break really helped a lot to relieved the stress of life. I am hoping that things will go on smoothly for this week.

I love cooking stir fried dishes like this sotanghon guisado. It is made of rice noodles stir fried in shrimps, chicken liver, seasonings and some vegetables. This menu is everybody’s favorite at home. I can always cook for this in about 30 minutes. Just be prepared with all the ingredients like slicing first the carrots, celery, shrimps and liver. Be sure not to over cooked all the ingredients to preserve the crispness and quality of all the ingredients. Best served while hot. Yummy!

The Christian nation is in observance today with the holy week. The passion, death and resurrection of Jesus Christ. This is a yearly observance and always declared as a non working holiday. Considered also as a break after the busy and monotony of life. Christ death brought us all the hope that there is always life after death. In every suffering that we have, there is always the resurrection and triumph amid the adversities and trying times of life on earth. I have come to realized that life is not about worldly things – achievements, career, accomplishments, material things, money, fame, power and many more. But it is always about our personal faith. Life on earth is only temporary. Setting our hearts to materials things just keep us craving for more that seemed to be unending. May we be enlightened by the real meaning of the cross in our life.

I am happy to wake up today, the first day of April. Time just flies sooo fast. Really I am. We are already in the fourth month of the year. April is also the month where summer time begins. The weather usually for this month is very hot and humid. Temperature increases mostly during daytime. Few or no rainfall expected during this month and many dusts accumulate the streets and other land areas. I do not know whats in store for me for this month but for sure my life would always be as hectic as usual. I hope things would go on smoothly this month and be favorable in all my undertakings.
